When you’re after something lighter in the morning, fruit salad fits the breakfast brief well! With different coloured fruits indicative of different nutrients, it’s a great way to get in a plethora of vitamins, minerals and antioxidants too.

Serve your fruit salad with a bit of yoghurt to get in protein/fat - these nutrients are slower to be digested, and so help to keep us feeling full for longer. Also delicious served as a nutritious snack!

FRUIT SALAD WITH YOGHURT

INGREDIENTS
1 green apple
1-2 cups purple grapes
1 punnet strawberries
1/3 cup pomegranate seeds (optional)
2-3 mandarins
2 green kiwifruit
1 cup yoghurt of your choice (Greek yoghurt or high protein yoghurt are good choices)
Small handful of mixed seeds e.g. sunflower, chia or pumpkin
½ squeezed lemon or 1 tsp lemon juice

METHOD

  1. Wash and then cut up all the fruit into bite-sized pieces and pile in a big bowl.

  2. Sprinkle over a little lemon juice.

  3. Serve either with yoghurt already stirred in or dolloped over fruit and seeds sprinkled on top before serving.
