A two-minute honey mustard dressing, that’s just the right combination of tangy and sweet. It’s perfect tossed through seasonal salad, and then served alongside grilled chicken, fish or tofu, for a speedy tasty dinner.

HONEY MUSTARD DRESSING
4 tbsp extra virgin olive oil
Juice of 1 lemon
1 tsp runny honey
1 tsp mustard
A pinch of salt and pepper
Add all ingredients to a bowl and whisk together.
Whisk well to help the ingredients emulsify together (i.e. so the oil and lemon juice aren't separated) - otherwise you might get blobs of olive oil or acidic lemon juice throughout your salad!
Taste test and adjust any ingredients, if desired (e.g. a little extra honey for sweetness..).
